You know what time it is. Pumpkin Spice time.
The first time I made these protein pumpkin spice pancakes, I was juggling the 30-30-30 method — within the first 30 minutes of waking up, get at least 30 grams of protein and move for 30 minutes. These pancakes fit right into that window. But even if you are not tracking macros, they are just an easy way to add protein grams to breakfast.
I cook a batch on Sunday morning and keep them in the fridge or freezer. On busy weekday mornings, I pop a couple in the toaster and have a warm breakfast before the house wakes up.
Ingredients
- 2 bananas
- 2 eggs (or egg whites)
- 1 cup greek yogurt (plain or vanilla)
- 1/2 cup pumpkin spice protein shake (e.g., Premier Protein or any similar brand)
- 1 tsp vanilla extract
- 1 cup flour
- 2 tsp baking powder
- 1/2 tsp cinnamon and a dash of nutmeg
You can add protein powder to the mix if you want extra. The recipe already gets protein from the shake and the greek yogurt, so it is totally up to you.

How to Make Them
- In a mixing bowl, combine mashed bananas, eggs, greek yogurt, protein shake, and vanilla.
- In another bowl, mix together flour, baking powder, cinnamon, and nutmeg.
- Add the wet ingredients into the dry ingredients and combine.
- Cook in a heated skillet. Serve with maple syrup.

My notebook says these freeze well too — stack them between parchment paper, bag them up, and pull out whatever you need each morning.
