Ultimate Breakfast Tacos

The first time I laid out scrambled eggs, sliced avocado, and a handful of tortillas on the counter, it hit me: this is not a recipe. It’s a system.

Five components. Endless combinations. And every single taco comes with protein, fiber, and healthy fats already covered.

The Why

I hesitate to call these ultimate breakfast tacos a “recipe.” They’re a template. Build each one using the Foundational Five framework, and you get a balanced meal without measuring or second-guessing.

The Ingredients

Protein. I go with scrambled eggs most days. Fish, chicken, tofu, tempeh — any quality protein works here.

Fat. Avocado slices are my default. Cheese or sour cream work too if you want something different.

Non-starchy carbs (fiber). This is where I have the most fun: cilantro microgreens, pickled red onion, lettuce, tomato, jalapeno, sauteed bell peppers, sliced radish. Each vegetable adds fiber, which matters at every meal — not just lunch and dinner.

Starchy carbs. The tortilla covers this. I like adding refried or pinto beans on top for an extra fiber boost.

Flavor factor. Fresh lime juice, salsa, hot sauce. Pick whatever wakes up the other four layers.

The How

  1. Warm your tortilla. I prefer corn, but use whatever fits your preference — grain-free, homemade, or from your local store.
  2. Scoop on the protein.
  3. Add fat, then fiber veggies, then beans if you’re using them.
  4. Squeeze lime, add salsa, finish with hot sauce.
